WINEMAKING

  • Manual harvesting, followed by sorting on a sorting table.
  • The grapes are gently transferred using a peristaltic pump into inverted truncated cone-shaped stainless steel tanks.
  • A cold maceration is carried out for 48 hours, followed by inoculation to initiate alcoholic fermentation.
  • A post-fermentation maceration lasts for 3 to 4 weeks.
